Buttered Puto Cheese

In all my fail attempts in making a perfect puto cheese, I finally got it right! You know, it took me 4 times, 4 fail times to finally master it. And it felt good after perfecting it. One thing I learned from my experience was to always follow the procedure and never attempt to change the ingredients measures unless you know what you’re doing. So here’s how to cook your own buttered puto cheese.


 Ingredients:
                  
                  1.       4 cups sifted all purpose flour
                    2.       2 cups sifted sugar
                    3.       2 ½ tbsp baking powder
                    4.       1 cup evaporated milk
                    5.       2 ½ cups water
                    6.       ½ cup melted butter
                    7.       1 piece egg & 1 tsp vanilla essence
                    8.       Small slices of cheese or bigger if desired
                    9.       6 cups of water for steaming

       Procedures:

1.       Combine the flour, sugar and baking powder in a large bowl then use a whisk to mix it.


          2. Add the butter, evaporated milk, egg, water and pandan essence then mix it well. This is how it should look like after mixing.


3.       Get your molds and pour the batter in.




4.       Pour 6 cups water in the steamer and heat it for 5 minutes and then put the mold in.


            5. Wait for 15 minutes to cook and insert a toothpick to know if it’s really cooked. You’ll know it after you insert the toothpick it comes out clean.


6.       If it’s cooked or nearly cooked, put the cheese at the top of the puto. 


7.       Wait for 1-2 minutes, just enough to let the cheese melt. And get it out. Be careful!


And that’s how you make buttered puto cheese. Hah! Funny thing is that after I took out my first batch, the lights went out and I was alone in our house! Good thing I managed to not panic and act like a grown up. I immediately searched for any candles and good thing I found 1 small candle and lit it. So to drive away the crazy thoughts storming in my head, I turned the music on and played Ariana Grande’s “Almost is never enough”. But the black out was short-termed (bummer!) because the lights went back on after 10 minutes. Why bummer? Because I was already caught up in the moment… beautiful moment, and I never experienced such that moment where I turned the almost scary into beautiful. 

After I finished my thing in the kitchen, my parents arrived and tasted my putos, and you know what they said? *cue in drum roll please* my mama asked me if I can make buttered puto cheese in her birthday because it’s really delicious! And my papa said that it is indeed tasty and that my 4 fail attemps are worth it. HAHA. I knew already what my papa would say because even if it tasted horrible, he will still praise me.
